For me, my dream fish would have to be Amphilophus hogaboomorum (That would pretty much complete the Red Devil collection), and some Herichthys geddessi. I haven't been able to find either of these anywhere.
A dream tank would be a 250g, withblack sand, large river stones, lots of drift wood and live plants. Stocked with the Hogaboomorum, Geddessi, and Regani.

Now this is a cool topic!
I am really stuck on this one. I would have to say that my gut instinct would be a 2000 gallon tank, built into a wall and framed with stones on the front, with black sand, large rocks, some concrete caves, and lots of plants with 6 peacock bass and some shoals of smaller fish.
Then again, I could easily go with an 800 gallon tank and a breeding pair of umbriferum, or a 350 and a breeding pair of festae.
Then there's the mixed tank in a 1000 with a jag, festae, umbee, and dovii, and various others for company.
I guess the ultimate cichlid tank would combine the regalness of a shoal of peacock bass with the beauty of a festae pair, and ferociousness of an umbee pair, and the exotic look of a Jag pair. Of course, I have no idea what size tank would be required to accomplish such a feat. I imagine it would be cheaper to buy your own country than to assemble such a tank.
Thanks Rex, that was cool!

Maybe it's just because I am new to this whole cichlid thing, but I'd have to say that my dream cichlid is the good old reliable Oscar. I'd love to have 10 16'' Oscars in what ever size tank I would need, preferably a wall in a mansion dedicated to them. But that's my dream.
