1: how much portion?
2: how often to feed Chris?
3: how to tell if he got enough to eat?

I would feed him twice a day no more than he can eat in 30 seconds, oscars are notorious piggies and will eat themselfs to death. For your main feeding I would go with Hikari cichlid gold floating pellets and soak them for a few minutes before giving them, and then you can have fun substituting a few feedings with raw shrimp, blood worms, meal worms, earth worms, beef heart, ghost shrimp, almost anything except feeder fish (BAD). But you don't want to do the treats to much or he might refuse the pellets, if he does start to refuse pellets don't be afraid to starve him for a few days to a week and he will eat them again (oscars can go weeks without food so it won't hurt him)

Btw you won't know if he got enough because he will ALWAYS beg for food unless he's throwing a fit and sulking then he will only eat when your not looking, these fish are seriously like children you'll see. Just stick to the two 30 second feedings per day and you'll be good
Also it's normal to see half the food he eats shooting out of his gills, they are just messy fish and a good bottom feeder goes a long way with as a tank mate

I'll choose the sinking pellets over floating. I find all my cichlids prefer sinkers. I'd avoid beef heart. They loveeeeeeeeeeeeee worms and it's pretty cool to watch. Veggies are good for them as well. Mine just spits out her peas but yours might like them.
How large is yours? Mine is 10 inches at least, named Lola.

I preferred the floating cause it's easier to net out uneatin food so it dosnt foul up the tank

+ a crayfish once every couple weeks. It's a nice treat for him/her & pretty cool to watch.

Food don't last long enough in the tank to go rotten.

I guess it depends on the fish, mine wouldn't have anything to do with food in the substrate
