What causes cichlids to rub up against surffaces in the tank? such as rocks. the glass, wood, or the bottom gravel.

Usually that means they are scratching. If it is continous that could mean they have internal parasites in their gills.
It's also a sign of dominance. They rub up against it because it is their glass, wood, or bottom gravel and they everyone to know it.

It could mean that an ick infestation is beggining, keep your eyes out for white-spot.
Also if you use a water conditioner that says "helps fish produce slime coat naturally". The manufacturer adds a substance that acts as an irritant so the fish produce slime. If you added this recentley that could be your problem. Not a problem actually, if that is the case don't worry.
